Vastu Guidance for a Kitchen, and the Practical Compromise
The traditional placement, and what to do when the builder has already fixed the plumbing.

South-east is the traditional quadrant
The cooking flame is placed in the south-east, with the cook facing east. In a builder flat this is often already decided by the gas and drain positions.
Orient within the kitchen you have
Where the room cannot move, positioning the hob on the south-east wall of that room is the usual compromise, and it is the one most practitioners accept.
Keep the hob and sink apart
Fire and water are traditionally not placed adjacent. Practically this is also good planning — you want prep counter between them anyway, which the work triangle already asks for.
Avoid the hob directly under a window
Traditionally avoided, and practically sound: cross-draught disrupts the flame and makes extraction far less effective.
Weigh it against ventilation and light
Where orientation guidance conflicts with getting an extractor duct to an external wall, most households prioritise the extraction. A kitchen you cannot ventilate is a daily problem.
